Cedrus
Cedrus is obtained from grapes selected at their optimum moment of ripeness of the Merlot variety, fermenting at a controlled temperature in “piegage” or trapping type deposits (sinking of the residue into the must) that permits greater contact of the grape skin with the must, as this method ensures an enhanced extraction of the components of flavour, aroma and colour that this variety of grape offers in its skin. After 7 days of maceration, the wine is devatted.
Average ageing: 8 months in 225 l. barrels or casks, made of 50% French oak and 50% American oak.

Visual notes: intense ruby red colour, with high robe.
Olfactory notes: As well as aroma of cocoa, characteristic of the Merlot variety, we can appreciate aromas of liquorice, menthol, balsamic herbs like rosemary, fennel and aniseed that blend into aromas of red berries, preserves and vanilla.
Taste notes: Pleasant, potent and well structured palate.

Serve decanted at a temperature of between 16º and 18ºC, ideal to accompany grilled meat, cold meats, cheeses or smoked foods.
