Idaeus is obtained from grapes selected at their optimum moment of ripeness of the Cabernet and Merlot grapes, fermented separately at controled temperature into punch down tanks.
A wine that has been cellared for up to two years, first in french and american oak casks and then in bottles.
Medium length ageing of 4 to 5 years.
Accurate combination of the best grapes of our domain. Clear but subtile hints of ageing that make it appear powerful but silky at the same time. Soft tanins and structure although present; it matches nicely with the most demanding dishes.
Visual notes: ruby, deep red colour with high robe.
Olfactory notes: plum preserves, bigarreau cherry and fresh red fruits.
Taste notes: intense, long-lasting potent flavour with freshness of forest berries. Long finish.
